Almond Banana Quinoa Bread

This is a gluten-free banana bread made from necessity! Wendy brought home a bag of blackening banana’s and they need to get used!

  • 1 cup quinoa flour
  • 1 cup almond meal
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp cardamom (ground)
  • pinch of nutmeg
  • 1 cup lite brown sugar
  • pinch of salt
  • 3 eggs
  • 3 black bananas
  • 1 tsp vanilla exctract
  • 1/2 cup melted butter
Pre-heat oven to 340F
Grease 9×9 glass or pyrex pan and sprinkle some almond meal in it. Shake to coat.
Mix all dry ingredients.
Mix all wet ingredients in separate bowl.
Combine wet and dry ingredients. Do NOT over mix.
Bake for approximately 1 hour or until a toothpick comes out clean.
Bread is edible will be more firm after cooling.
