UPDATE: After researching this, it’s clear i needed to research this before attempting it. More “flour”, less xanthan gum, and add baking powder. Possibly a small amount of plain skyr. I’ll do an updated one soon with pics.
- 1 cup “bath warm” water
- 1 pkg active yeast
- 1/2 tbsp sugar
- 100g chickpea flour
- 50g teff flour
- 50g potato starch
- 3 tsp xantham gum
Mixture is very sticky. I’ve read that’s what to shoot for. Tactical error: put on board dusted with flour to make into ball… not feasible – just keep it in the bowl.
Rising covered for 30.
With oiled hands, press onto lightly oiled parchment paper on cookie sheet.
Sprinkle with desired herbs and lightly salt.
Fold in half.
Press out again,
Sprinkle with desired herbs and lightly salt.
Cover. Let rise.
Cook at 400 for 20-30 minutes.
Tried this. Kept in bowl as suggested. Ended up more like a dense chewy cracker. Tasty but not pizza dough like.
