It's TRUE! You can't overcook chicken thighs!

After making Gringo Guac, I set about to editing pictures and putting it all together in a blog post. Much to my surprise and Wendy’s acceptance of my spazziness, I had completely forgotten about the chicken thighs I was roasting in the oven.

1 hour at 325℉. Just enough to render out the fat while keeping the meat juicy.

2 hours later…

ahhh… looks done?
this might take some effort to clean.

The best part is the chicken is delicious! A little crispy on the edges but damn tasty!
