We got this off of Bobs Red Mill www site but the recipe was terrible. Wendy modified on the fly. The results were fluffy and just crunchy. Yum!
- 1/2 cup Bob’s Red Mill Gluten Free All Purpose Baking Flour
- 3 tbsp coconut flour
- 1/3 cup flaxseed meal
- 1 tbsp canola oil
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 1 egg
- 1 cup almond vanilla milk
- cinnamon
- vanilla bean powder
- Mix all ingredients except coconut flour in bowl. Blend well with whisk.
- Whisk all wet ingredients together in separate bowl.
- Slowly whisk wet into dry ingredients.
- Add coconut flour one tbsp at a time while whisking to desired thickness.
