The best gluten free pancakes!

We got this off of Bobs Red Mill www site but the recipe was terrible. Wendy modified on the fly. The results were fluffy and just crunchy. Yum!

  • 1/2 cup Bob’s Red Mill Gluten Free All Purpose Baking Flour
  • 3 tbsp coconut flour
  • 1/3 cup flaxseed meal
  • 1 tbsp canola oil
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 egg
  • 1 cup almond vanilla milk
  • cinnamon
  • vanilla bean powder
  1. Mix all ingredients except coconut flour in bowl. Blend well with whisk.
  2. Whisk all wet ingredients together in separate bowl.
  3. Slowly whisk wet into dry ingredients.
  4. Add coconut flour one tbsp at a time while whisking to desired thickness.
